Surf schools vary by wave, zone to zone. El Tunco has two very different waves within a short walk, and which one you learn on matters. The beach break in front of town is rock and shore-dump at low tide, fine with someone watching you, less fine alone. Sunzal, around the point, is the long right most schools take beginners to, and it forgives a lot more.
Lessons are usually booked the day before over WhatsApp and include a board. Mornings are the standard slot; the wind comes up through the afternoon.
